Title: Mexican Wedding Cookies 2

Yield: 3 Dozen

1 Stick of butter
1/4cBrown sugar, packed
1/2tsVanilla extract
 dsOf salt
1/2cWhole wheat flour
1/2cUnbleached white flour
1/4cPecans, walnuts, or - sunflower seeds (pecans - are authenti

If using a food processor, all above ingred. can be added at once and processed until ball of dough is formed. Roll dough into 1" balls between palms of hands. Place balls 1" apart on a lightly greased cookie sheet. Bake in 400 degree oven for 12 min. or til lightly brown around the edges. Carefully remove from cookie sheet. If desired, for decorative purposes, sprinke cookies lightly with confectioner's sugar while warm. (Actually, I do it after they cool, because the sugar will melt and they'll get all gummy, if done when warm. )

If not using a processor, beat butter w/ 1/4 c. brown sugar in med. bowl til fluffy. Beat in vanilla and salt. Gradually blend in flour and nuts til ball of dough can be formed. Rest of instructions are the same as above.

What a surprise to find these while looking through a book of my dear mother-in-laws collected recipes. She'd have been so pleased to be of help .
